Hi,
on my Nexus 5 with Android 5.0 long pressing on the profile name does not open the profile menu anymore. Therefore it is not possible to change any settings.

This bug was fixed in the latest release of the Connect Client for Android.
OpenVPN Connect Release notes for 1.1.16 build 74 states:
- Fixed Android 5 issue where tapping on notification failed to bring app to the foreground.
This ticket is being reviewed in an effort to clear out the unrelated tickets. Unrelated because this is not an open source issue, it is an issue for the commercial edition of OpenVPN called Access Server and its related OpenVPN Connect Client. In the future, if anyone wants to report a bug in the OpenVPN Access Server or Connect Client products, kindly go to www.openvpn.net and sign in there and use the support ticket system there.

I'm having this same issue on both a Nexus 5 and a Nexus 7 (2012) with Android 5.0 Lollipop.
